This concentrate is made of rye flour. It is fermented for the purpose of making żurek soup sour.
I add 250g of żur to approximately 1 litre of vegetable stock or a meat broth to create a yummy sour żurek.
Try adding żur to the water you have left from heating up the white pudding sausages (biała kiełbasa). Season to your liking, add fried bacon, splash of cream and some fresh chopped parsley.
