Breakfast Kielbasa-Egg Buns with Dill Mustard

Ingredients

  • Smoked Kielbasa, sliced into coins

  • 2 brioche or soft rolls

  • 4 eggs + 2 tbsp milk

  • 1 tbsp butter (or smalec if you have any)

  • 2 tbsp Dill Mustard

  • Chopped chives

Method

  1. Toast rolls lightly.

  2. Pan-fry kielbasa slices 3 min until crisp-edged.

  3. Whisk eggs & milk; scramble in butter on low heat.

  4. Fill buns with eggs, kielbasa, drizzle dill mustard, sprinkle chives.

Quick tip: Swap brioche for wholemeal for a healthier spin.
